Budget Bites: Fried Rice

If we don’t feel like going to the grocery store or want to make a dinner that will give us some lunch leftovers, this is our go to as we usually have all of the ingredients on hand.

It’s versatile, quick and easy!

Beef fried rice

Ingredients

1 pound of ground meat (we use beef; but chicken, pork or turkey would also work!)

1 cup of dried white or brown rice (I like to soak mine in water for 8-24 hours with a teaspoon of apple cider vinegar; this makes it easier to digest)

2-3 carrots, diced

1/2 cup peas, frozen

2-3 eggs

1/4 cup soy sauce

1 tsp garlic powder (or fresh minced garlic if you have it)

1 tsp onion powder (or fresh diced onion if you have it)

Optional: 1 tsp ground or fresh ginger

Optional: 1 scoop of Pure Supplements desiccated beef liver or some live pate — this recipe is perfect for masking the taste of liver!

Instructions

1. Cook rice according to directions. Liquid amounts vary depending on the type of rice you use. If you soaked yours, be sure to rinse and drain it prior to cooking.

2. While the rice is cooking, sauté your carrots in 1tbsp of oil (we use tallow) for about four minutes. If you choose to use fresh garlic or onion, add it at this time. Add ground meat and cook until brown.

3. Add frozen peas and powdered seasonings (if not using fresh garlic and onion). Mix well. Turn down the heat to low-medium.

4. Add eggs. I like to save a bowl and scramble them in the pan. Scramble for 2-3 minutes.

5. Add cooked rice and soy sauce. Mix well.

  1. Our go to meal for times like you describe is very similar to yours…about the only difference is we add some black beans.

    It’s a 20 minute drive to the grocery store, but we often feel “I don’t want to drive that far”….one would think we were having to walk, instead of drive. 🙂
